Proper Food Storage: Ensuring Quality, Safety, and Nutrient Retention

Proper food storage is essential for maintaining quality, safety, and nutrient content. When handled and stored appropriately, food remains safe for consumption while minimizing waste and preserving its original nutritional value.

Freezers play a crucial role in long-term food storage. To ensure food safety, freezers must operate at -18°C or lower. This temperature inhibits bacterial growth and maintains food quality over extended periods. A freezer thermometer is highly recommended to monitor the temperature and ensure consistent cold conditions.

Refrigerators, on the other hand, should operate at 5°C or below, with perishable items ideally kept at or below 8°C. These temperatures slow microbial activity and prevent food spoilage. To ensure accurate temperature readings, a refrigerator thermometer can be used. For precision, a food probe inserted into items such as cooked or reheated food helps confirm their internal temperature is safe.

Efficient refrigerator use also plays a role in maintaining proper storage conditions. Opening the refrigerator door can cause up to 30% of cold air to escape. To mitigate this, strategically placing closed food storage containers in empty spaces helps retain cool air when the door is opened. It’s also essential to keep the refrigerator full but not overcrowded. Ample airflow ensures that all areas maintain a uniform temperature, and there should be space between containers to allow proper circulation.

Food should always be stored in wrapped or sealed containers to prevent moisture loss, odor absorption, and contamination. If the store packaging is intact, it’s best to leave food in its original wrap. When transferring food to other containers, ensure they are airtight and suitable for cold storage.

Incorporating these practices not only ensures food safety but also reduces waste, saves energy, and retains nutrients. According to the Food and Agriculture Organization, about 1.3 billion tons of food are wasted annually, partly due to improper storage. Proper refrigeration and freezing can play a significant role in addressing this global issue.

What is food quality?

Food quality issues are closely related to food safety in practice because both are managed throughout the production process. Quality and safety perception is linked to food choice and consumer demand, addressing questions of price perception and the validity of willingness-to-pay measurements.

Quality can be defined “The distinctive trait, characteristic, capacity or virtue of a product that sets it apart from all others.” Quality includes all other attributes that influence a product’s value to the consumer. This includes negative attributes such as spoilage, contamination with filth, discoloration, off-odors and positive attributes such as the origin, colour, flavour, texture and processing method of the food.

Quality concept within the food industry puts an emphasis on three key factors:
• Conformity with product’s intended purpose;
• Safety;
• Satisfaction of consumer’s expectations and perceptions.

In general, most consumers pay attention to the first two, but their potential expectations with respect to quality involves a lot of different factors. Price, taste, and appearance are among the basic properties for assessment of product’s quality.

Market failures can also occur for quality, and public intervention can sometimes address these failures through establishment of grades and standards.

Because product quality may differ among markets and quality differentiation can benefit industry, private actions can often substitute for public actions to address issues of product quality.

Food safety system

A trend towards convenient foods and the lengthening of food supply chain in the period after the Second World War coincide with the increase of foodborne illness outbreaks. Government regulators and consumer groups demand for safer food has meant that the food industry in the 1950s and 1960s intensified their efforts to assure food safety.

A system that ensures our food is safe and poses no danger to human health can only work when responsibilities and tasks are clearly assigned – this includes farmers in grain fields as well as scientists in food laboratories. The costs and nature of food safety investment will be influenced by the growing recognition that a farm to table approach is necessary to address food safety.

Implementing a food safety system has become a ticket for accessing global agri-food supply chain. Customer and regulatory requirements are the main drivers for certification/ compliance.

Because many hazards can enter the food chain at different points and it is costly to test for their presence a preventative approach that controls processes is the preferred method for improving safety.

Sometimes characterized as a Hazard Analysis Critical Point (HACCP) system, thus approach is increasingly used as the basis for food safety regulation and for private certification of food safety. Once the process steps have been identified along with the possible hazards involved, it is necessary to find ways of preventing or controlling these hazards. For example, the hazard may be ‘spread of harmful bacteria from raw to cooked food’, one control measure to prevent this would be ‘careful handling practices, keeping raw and cooked food apart during all process steps’.

The importance of food safety programs

There is no doubt that a structured, effective management system can enhance an organization. It is also evident that an inadequate, poorly designed system can be a true detriment to an organization.

The basis of the food safety system to be adopted in the food industry consists of a combination of good manufacturing practices (GMP), sanitation standard operating process (SSOP), and a hazard analysis and critical control point (HACCP) system.

Prevention can be best achieved when food safety and quality are seen as strategic business objectives that can also contribute directly to improved financial performance.

Every organizations or establishments that in any way produce or serve food for consumption have a direct responsibility to ensure that their food is safe. Consumers will unquestionably continue to demand that food producers comply with the highest possible food safety standards.

With the safety programs implemented the consumer could feel confident in the safety of the product. With that confidence there is an increased confidence in the customer’s brand and ultimately confidence in product brand.

Principles of food safety

The subject food safety has become a discipline in its own right and a formal definition was elaborated in 1997 by CAC: food safety is the assurance that food will not cause harm to the consumer when it is prepared and/or eaten according to its intended use.

Safety of food means safety of raw materials, of methods of processing, transport, distribution and retail. Safety of food supply is a key to the consumer confidence.

Safety of food includes food hygiene that is consisting in five key principles according to World Health Organization (WHO): preventing contaminating food with pathogens and cross–contamination by separation raw and cooked foods, using the appropriate time and temperature for cooking food as well as strong them and using safe water and cooked materials.

The key principles of the US food safety system are that:
*Foods placed on the market must be wholesome and safe
*Food safety policy is based on scientific evaluation of hazards; in particular the principles of risk analysis, and when necessary, the precaution principle apply
*Government has enforcement responsibility
*Food producers, retailers etc, are expected to comply with food safety legislation
*The regularity process is transparent for the public

The principles outline the basic needs for the food supply to be safe and nutritious - this is the fundamental purpose of the system.

Meeting this need requires improvements in farming and downstream activities, including manufacturing, distribution, food service and retailing such as that they support a healthy environment and demand fewer resources and even generates resources such as energy and water.

The meaning of food safety

The term safe food represents different ideals to different audiences. Consumers, special interest groups, regulators, industry and academia will have their unique description based on their perspectives. According to Codex Alimentarius Commission (CAC) food safety is the assurance that food will not cause harm to the consumer when it is prepared and/or eaten according to its intended use.

Unsafe food contains hazards that can make people sick, either immediately or by increasing their risk of chronic disease.

Foodborne diseases are caused by a wide range of agents, with varying degrees of severity ranging from mild indisposition to chronic or life-threatening illness. Hazards that receive attention from policy makers include:
*Microbial pathogens - Microorganisms like Salmonella, Listeria, Campylobacter, or E. coli that occur naturally in animals humans or the environment can cause diarrhea and long term complications like kidney failure.

*Zoonotic diseases – Diseases like tuberculosis or brucellosis can be transmitted from animals to humans through food.

*Parasites – Intestinal worms afflict several hundred million people in developing countries; some are transmitted through contaminated water or food.

*Adulterant – Physical contaminates in food such as metal or glass, or other nonfood elements, such as rodent feces can pose a hazard.

*Mycotoxins – Naturally occurring on plants or in animal product when animal eat feeds containing mycotoxins. Mycotoxins increase the risk of cancer in humans.

*Antibiotic drug residues - When animal receives antibiotics drugs through feeds or improper treatment residues can occur in animal products. Some residents pose chronic risks, antibiotics used in animals is also alleged to contribute to the growing resistance of microorganisms to antibiotics.

*Pesticides residues - Result from pesticides used in production and distribution. Some residues increase the risk of cancer; others carry risks of neurochemical damage.

*Heavy metal – Enter food through the soil or water and can cause acute or chronic illness.

*GMOs – Genetically modified foods may contain allergens or toxins that are not found in conventional foods.

The food industry is responsible for ensuring that the food that it puts on the marketplace or that is served in food service establishments is safe, fit for human consumption and meets regularity requirements of the country where it is marketed.

Why we need food safety standards?

The term ‘safe food’ represents different ideas to different audiences. Consumers, special interest groups, regulators, industry and academia will have their unique description based on their perspectives.

Food safety is an issue of growing importance due to several worldwide trends in food system.

The growing movement of people, live animals, and food products across borders, rapid urbanization in developing countries, changes in food handling, and the emergence of new pathogen or antibiotic resistance in pathogen all contribute to the increasing food safety risks. The liberalization trade and the growing number of imported foodstuffs too increase the food safety risks.

Inadequate food safety is a significant contribute to the burden of disease in developing countries and should be addressed as the food system develops and along with related investments in public health. Basic sanitation and water services may be a prerequisite for addressing many food safety hazards.

Food safety is one of many issues in developing fresh food product exports, which account do about half of all agricultural exports from developing countries.

Such exports can play a role in rural poverty alleviation, but will not be the only source of increased income in rural areas.

The industrialization of agricultural production, mass production and increase in the number of food service establishment, also tourism, urbanization with subsequent changes in lifestyles, food consumption pattern and food preparation practices will require high level of food safety standards.

Thus, food safety is a significant issue for public health and for export markets in developing countries.

Setting priorities for investments in food safety will require careful evaluation.
