What is food quality?

This includes negative attributes such as spoilage, contamination with filth, discoloration, off-odors and positive attributes such as the origin, colour, flavour, texture and processing method of the food.
Quality concept within the food industry puts an emphasis on three key factors:
• Conformity with product’s intended purpose;
• Safety;
• Satisfaction of consumer’s expectations and perceptions.
In general, most consumers pay attention to the first two, but their potential expectations with respect to quality involves a lot of different factors. Price, taste, and appearance are among the basic properties for assessment of product’s quality.
Market failures can also occur for quality, and public intervention can sometimes address these failures through establishment of grades and standards.
Because product quality may differ among markets and quality differentiation can benefit industry, private actions can often substitute for public actions to address issues of product quality.

*A product or service free or deficiencies
Quality management systems are elaborate management systems that can be used by any organization to develop and achieve its quality objectives. Quality management systems are like air conditioning systems – they need to be redesigned. All the components need to fit together the inputs and outputs need to be connected, sensors need to feed information to processes which cause changes in performance and all parts need to work together to achieve a common purpose.
Quality management systems include quality planning and improvement activities, in addition to quality control and assurance activities.
These systems are intended to provide a company with the capability to meet all quality requirements.
Three types of quality are critical to the production of products and services:
*Quality of design or redesign
*Quality of conformance
*Quality of performance

Quality control program activities consist of inspecting, testing, and monitoring associated with raw material control, process control and finished products control.
This type of program is one that every food manufacturer and handler should install in the developmental stages of the company, continually enhance and use as a tool to lower risk, mitigate regulatory involvement and ensure that the food product are safe from the farm to the consumer.
It is to determine whether the quality and safety requirements are fulfilled by detecting whether unacceptable levels of hazards or defects exist in foods.
If an unacceptable level of a hazard or defect is detected, the food might be repaired or reworked to remove the hazard or defect so that it fulfills the requirement, or it might be rejected entirely and scrapped.
The program protects the health of the consumer and combats dishonest trade practices and fraud. Food quality control is applicable throughout the entire food system.

What is cocoa powder?
The word cacao comes from the word kakawa from language of the Olmecs people and was already used around 1000 BC.
Cacao is deliciously rich and bitter. Raw cacao beans can be ground and used in lieu of cocoa powder or chocolate. There are two basic types, dutched and natural and each is available with fat contents within a range of about 8-32%.
The powder should be manufactured with well-winnowed nibs from properly fermented and dried cocoa beans.
Cocoa powder is a valuable flavoring material in baked goods and desserts as well as the basis of hot chocolate drinks. It is made from fermented, roasted and ground cacao beans.
Like chocolate, cocoa powder is produce form liquor by removing some of the fat. This is carried out by hydraulic pressing of the liquor, the quantity of fat removed being carefully controlled.
The commercial powder varies in color and flavor, dependent upon the quality the beans used, the degree of roasting and precise method.
The good quality cocoa powder has the following characteristics:
*PH: 5.6 to 7.1 dependent upon whether or not the cocoa beans were processed with alkali.
*Fat: about 24% and not less than 22%
*Moisture: 3-4%
The higher the fat content the more rounded is the flavor.
