Healthy food of red beans

Small red, pinto and dark red kidney varieties -- are an excellent low-fat source of antioxidants, protein, dietary fiber and copper.

They’re also a good source of iron, magnesium, phosphorus, potassium and thiamin. Red beans also contain some vitamin A and B complex vitamins.

In USDA ranking of foods red beans is one of four beans having the highest antioxidants capacity per serving size of any food.

Red beans are high in protein, but for more complete utilization they should be eaten with grains, dairy products or nuts and seeds.
